Smoked Tofu Sandwich with Hummus
A light, fresh sandwich with layers of smoked tofu, artichoke & spinach hummus, cucumber, & kale. This recipe is perfect for a light, easy-to-make lunch.
The main ingredient of this sandwich is the smoked tofu. You can use regular tofu, but the smoked kind is a lot firmer, plus it has a delicious smoky flavour. I buy the tofu already smoked, but it's surprisingly easy to make yourself. You essentially marinate the tofu in liquid smoke, then bake it for 20-30 minutes. You can also grab a recipe here.
How to Cook the Smoked Tofu
To prepare the tofu, first thinly slice it widthwise. Add the slices to a large frying pan, with the olive oil and roughly chopped garlic.
Then, cook for about 10-15 minutes over medium-high heat. You want to heat the tofu up and slightly fry it to give it a yummy texture.
Next, spread about 2 tbsp of spinach and artichoke hummus over each of the 4 slices of bread.
Side Note: Sometimes I find using a spoon to spread the hummus works better than a knife.
Then, layers a couple of slices of cucumber on top of the hummus. The hummus will help hold the cucumber down so that when you got to eat your sandwich all the ingredients don't spill out.
Once the smoked tofu is cooked, divide it among the sandwiches, followed by some chopped kale. If you want to, add a slice of cheese, then add the other slice of bread to the top and boom you have a delicious sandwich.
