Vegan BBQ Pulled Jackfruit Sandwich

Never miss pulled pork again with this vegan BBQ jackfruit sandwich. Made with loads of saucy jackfruit layered on a bun, topped with creamy cole slaw.

Jackfruit has recently grown in popularity for its meaty-like texture, though, unlike meat, it has no saturated fat or cholesterol.

Jackfruit also has minimal flavor and tends to take on the taste of whatever sauce and spices its cooked with. This makes jackfruit a perfect substitute for pulled pork because it'll absorb all of that yummy BBQ flavour.

If you put all these factors together, what you have is a great pulled pork sandwich you won't believe is vegan.

Cook the Veggies

Start by draining the jackfruit.

In a medium saucepan, heat the olive oil over low-medium heat. Then, add the minced garlic, cook for about 2 minutes or until you can start to smell the garlic.

Next, stir in the finely chopped onion and cook for about 5-8 minutes or until onions become transparent.

If you are a fan of spice, add the roughly chopped poblano pepper now too.

That BBQ Sauce

Once the onions are cooked, add in the jackfruit and mushroom broth. Let this simmer over medium heat for about 10-15 minutes.

After 10-15 minutes, the jackfruit should be tender but not soft. The next step will be to shred the jackfruit so that it resembles pulled pork. I find using one fork to hold a given piece of jackfruit while using another fork to shred works best.

Next, mix in the BBQ sauce, and allow everything to simmer together on medium heat for an additional 10 minutes. This will allow the BBQ sauce to seep into all the nooks and crannies of the jackfruit.

The Cole Slaw

This cole slaw is super easy to make and tastes amazing with these recipe along with other recipes calling for a basic slaw.

Red cabbage has so many health benefit that I try and add it to as many recipes as I can. It also tastes amazing in this slaw!

Now, let us get down to the actually recipe.

Mix the shredded red cabbage, carrot strips (use a vegetable peeler), vegenaise, apple cider vinegar, salt, and pepper in a large bowl.

  3. Drain the water from the jackfruit, then add to pan, along with the mushroom broth. Cook on medium heat for 10-15 minutes.
  4. Use two forks to shred the jackfruit so that it resembled pulled pork.
  5. Next, mix in the BBQ sauce, then let simmer for an additional 10 minutes.
