Mediterranean Skewers with Tofu and Vegetables

Try this quick, easy Mediterranean skewers recipe today. Marinated tofu, zucchini, red peppers, and red onion all grilled to perfection in 10 minutes.

There is a lot of things that are great about the summer, from the nice weather to swimming, plant-based ice cream, and barbequing. Although, wanting to get everyone together during this time can be a bit costly, BUT it doesn't have to be.

These Mediterranean tofu skewers are a budget-friendly recipe you can easily make any day of the week.

So let's warm up the barbeque and start cooking!

Marinate the Vegetables & Tofu

First, you're going to want to press the tofu to give it a more firm texture. To do this, sandwich the tofu between two pieced of paper towel. To weigh it down, place a cutting board on top followed by some books or heavy cans for about an hour.

Next, let's cut the vegetables up.

Note: Onions have chemical irritants that stimulate the eyes' lachrymal glands, which leads to the release of tears. To cut an onion tear free, put the onion in the freezer for about 5 minutes prior to cutting it. Although, I don't know if this is grounded in any truth or just a placebo effect it does seem to work for me.

Cut the onion, zucchini, and the pepper into 1 1/2 inch squares. Then, add them to a large mixing bowl, followed by the garlic, lime juice, lemon zest, basil, oregano, red pepper flakes, capers, and the olive oil.

After the tofu has been pressed go ahead and add it to the bowl, then let everything marinate for 30 minutes to an hour.

Assemble the Skewers

While everything in marinating, soak the skewers in water for about 20 minutes to prevent them from burning on the grill.

Then, set the grill to medium and allow it to heat up while you thread the marinated tofu, zucchini, red peppers, and red onion onto the soaked skewers.

Home stretch

Lastly, cook the Mediterranean skewers with tofu and vegetables on the grill for 10 minutes, about 5 minutes on each side or until vegetables are tender.

If you angle the skewers on the grill you'll get some nice charred lines on the tofu.

  4. Meanwhile, soak the skewers in water for about 20 minutes to prevent them from burning on the grill.

  6. While the grill is heating up, thread the marinated tofu, zucchini, red peppers, and red onion onto the skewers.
  7. Cook skewers for 10 minutes on the grill, about 5 minutes on each side or until vegetables are tender.
