Jerk Tofu with Coconut Lime Rice

Creamy jerk tofu over a bed of tropical coconut lime rice is a classic Caribbean dish. This recipe is perfect for anyone who likes a little pop of spice.

This was originally two separate recipes, but then I had some leftovers so I decided to mix them together and the rest is history.

The jerk sauce, depending on which one you use, can be a bit spicy, but the coconut rice balances it perfectly.

The Jerk Tofu

Start by preheating the oven to 400° F.

Then, toss the smoked tofu with the Caribbean Jerk sauce to coat. The smoked tofu really works nicely with this recipe because it is a bit firmer and really compliments the Jerk sauce.

To cook, spread the tofu on the baking sheet, and bake for 20-30 minutes. Also, make sure to give the tofu a shake about every 10 or 15 minutes to prevent sticking.

The Jamaican Jerk Veggies

Now, in a frying pan, heat the olive oil and garlic over medium-low heat for about a minute or until you can begin to smell the garlic.

Next, add the finely chopped onions and cook for about 5-7 minutes or until they begin to soften. Then, add the sliced mushrooms to the frying pan and cook for an additional 5 minutes.

Once the tofu is baked, combine it with the other ingredients in the frying pan, along with the mayo and remaining Jerk sauce. Let simmer for about 5 minutes to allow all the spices and flavours to mix and mingle.

The Coconut Lime Rice with Black Beans

First, cook the jasmine rice according to the package. The instructions should be similar to this: bring 2 cup rice and 4 cups of water to a boil, then reduce heat, cover, and simmer for 25-30 minutes or until water is absorbed. Just don't overcook the rice, because it'll be getting reheated with the coconut milk.

While the rice is cooking, in a large frying pan, heat the butter and garlic over low-medium. Cook for about a minutes or until you can begin to smell the garlic.

Next, stir in the black beans, followed by the cooked rice, then the coconut milk and lime juice. Cook for about 5 minutes on medium-high heat or until the coconut milk begins to thicken.

Home Stretch

Plate desired rice, followed by a large scoop of jerk tofu.

  3. Next, stir in the black beans, followed by the cooked rice.
  4. Then, add the coconut milk and lime juice. Cook for 5 minutes on medium-high heat.
  5. The Jerk Tofu
  6. Preheat oven to 400° F.
  7. Toss the smoked, cubed tofu in 1/2 cup Caribbean Jerk sauce.
  8. Then, spread on baking sheet. Bake for 20-30 minutes, tossing every once and a while.
  9. The Jerk Sauce
  10. In a frying pan, heat olive oil and garlic over medium-low heat for about a minute or until you can begin to smell the garlic.
  11. Next, add the finely chopped onions. Cook for about 5-7 minutes or until they begin to soften.
  12. Then, add the sliced portobello mushrooms and cook for an additional 5 minutes.
  13. Once the tofu is done, add it to the frying pan. Stir in the remaining sauce, along with the mayo. Let simmer for about 5 minutes.
  14. Home Stretch
  15. Plate the desired rice, then add a large scoop of jerk tofu on top.
