Jerk Cauliflower Steaks with Coconut Rice & Beans

Love Jerk? Try these Jerk cauliflower steaks smothered in Caribbean Jerk sauce, served with savoury coconut rice & kidney beans. Perfect for dinner or meal prep.

This recipe has a nice kick of spice, from the Caribbean Jerk sauce, but it isn't too overpowering. This is especially true once you've paired it with the creamy coconut rice.

The Tofu Jerk sandwiches I make are my absolute favorite, but I find that I am eating a lot of tofu.

Not wanting to give it up the jerk, I made Jerk Jackfruit sandwiches, and now I have branched out to these Jerk cauliflower steaks.

I paired it with the coconut rice and kidney beans, which just makes a perfect balanced meal. This recipe is also great for meal prep. The kidney beans, brown rice, and coconut milk are all protein-packed and will help keep you full throughout the day.

Can You Cook Rice In Coconut Milk?

Yes, just make sure that when you bring the coconut milk and rice to a boil, you turn the heat to a medium-low simmer so that you don't scorch the coconut milk.

How To Cut Cauliflower Into Steaks

Cut the cauliflower into steaks by first cutting the cauliflower in half, lengthwise, through the core.

Take one half, then place it cut side down onto the cutting board. Next, slice the cauliflower into 4 slabs.

If any of the steaks crumble, you can use the other half of the cauliflower to cut a few extra steaks. I like to save the crumbled pieces for other recipes, like cauliflower wings.

How To Make Jerk Cauliflower Steaks With Coconut Rice & Beans

STEP 1: Make the Kidney Bean Coconut Rice

First, preheat the oven to 375° F.

Then, cook the rice according to the package, but instead of water use coconut milk. Also, add in the minced garlic, salt, and pepper so the rice can absorb those flavors while cooking.

Note: You'll add the kidney beans once the rice is cooked.

STEP 2: Make The Jerk Cauliflower Steaks

Cut the cauliflower half into 4 steaks.

Then, place them on a medium baking sheet. Sprinkle the minced garlic and drizzle the olive oil over the top of the cauliflower steaks. Cook in preheated oven for about 10-15 minutes.

Tip: Add 1/2 cup of water to the bottom of the baking sheet to help steam the cauliflower while it cooks.

Then, remove the cauliflower from the oven, brush with the Jerk sauce, and cook for an additional 10 minutes on until tender.

STEP 3: Plating

When the coconut rice is cook, fluff with a fork, then fold in the kidney beans.

To plate, add a big scoop of rice to the plate/bowl, followed by a slab of Jerk cauliflower.

What To Have With Your Cauliflower Steaks & Rice

This recipe can be enjoyed as is since it is a meal already, but you can also accompany the dish with:

  • Garlicky Green Beans
  • Creamy Vegan Slaw
  • Peas
  • Corn Salsa

What To Do With Leftovers

  • Use the Jerk cauliflower steaks as sandwich patties, maybe topped with a creamy carrot-cabbage slaw or tomatoes and lettuce.
  • Wrap the jerk cauliflower into a wrap with the coconut rice and kidney beans and make a vegan Jerk burrito.

RECIPE NOTES
  • If your rice is "watery," remove the lid and cook off some of the excess coconut milk. This way you can also heat up the kidney beans after they have been added.
