When you are crunched for time crockpots are a women's or man's best friend, but if it's just you eating there can be more leftovers than you'd like. One way to use up some is to make these delishious grilled cheese sandwiches!

You can buy pre-sliced sourdough bread, although I do suggest buying a loaf of bread that you can cut yourself. That way you can cut thick slices, which will help keep the structure of the sandwich.

To start, spread 1/2-tbsp of vegan butter on one side of each piece of bread. Then, place 2 slices of the bread, butter side down, in a pan over low-medium heat.

Next, add a spoonful of caramelized onions and a drizzle of the onion soup broth to each slice of bread, followed by a slice of cheese.

Finally, place the other pieces of bread on top, butter side up. Then, on medium heat, grill each side for 5 minutes or until each side is golden brown.
