Creamy Jamaican Jerk Tofu Wrap
These creamy Jamaican jerk wraps are made with slightly-spicy jerk tofu, fresh mushrooms, & onions, wrapped in a tortilla with vegan mayo, lettuce, & tomato.
This Jerk sauce transforms plain tofu into something delicious, without increasing the total calories of the dish. Most Jerk sauces have 0 calories, so it's a great way to add flavour guilt free.
The origins of this hot-spice mixture can be traced back to Jamaica as early as 1655. If you stop to think about how long some of these recipes have been around for it's pretty crazy.
The Jerk Tofu
Start by preheating the oven to 400° F.
Then, toss the smoked tofu with 1/2 cup of Caribbean Jerk sauce. The smoked tofu goes really nice with this recipe because it's a bit firmer and really compliments the Jerk sauce.
To cook, spread the tofu on a baking sheet, and then bake for 20-30 minutes. Also, make sure to give the tofu a shake about every 10 to 15 minutes to prevent it from sticking to the pan.
The Jamaican Jerk Veggies
Now, in a large frying pan, heat the olive oil and garlic, over medium-low heat, for about a minute or until you can begin to smell the garlic.
Next, add the finely chopped onions and cook for about 5-7 minutes or until they begin to soften. Then, add the chopped portobello mushrooms to the frying pan, and cook for an additional 5 minutes. I had originally used cremini mushrooms, but the portobellos have such a richer taste and give the wraps some added texture.
Once the tofu is done, add it to the frying pan, along with the remaining Jerk sauce, 1/4 cup water, and the vegenaise. Let simmer for about 5 minutes to allow all the spices and flavours to mix and mingle.
Assemble to Wrap
To assemble the wrap/buns, distribute the jerked tofu between the tortillas/buns. Then, top with the vegan mozzarella cheese, a handful of lettuce, and the tomatoes.
The Jerk sauce definitely has a kick of spice (depending on which brand you buy), but the vegan mayo, tomato, and lettuce help balance it nicely. The vegan mayo also gives the wrap a creamy, saucy taste. My mouth is literally watering while writing this, and I just ate one, that's how good this Jamaican jerk wrap is!
Finally, fold the tortillas, then return to a frying pan and grill each side for about a minute. This will help give the outside of the wrap some crunch while helping to hold the wrap together.
Alternatively, you can enjoy the jerk tofu on a bun. I find it helps balance the spice, especially if your jerk sauce is a tad bit too spicy.
As you can see, I'm a little obsessed with this recipe right now. I have had the Jerk tofu on Lime Coconut Rice with Black Beans, on a wrap, and bun... There is very little that this jerk tofu doesn't taste delicious on. I hope you enjoy this recipe as much as I have/am.
