Cilantro Lime Rice with Vegan Tzatziki
Cilantro lime rice is an easy, budget-friendly recipe anyone can make. The cilantro adds vibrant color, while the lime gives the rice some zest.
This recipe reminds me of summer, probably because it is super light and fresh.

Rice / Cilantro / Lime = Let's Go
Start by cooking the rice according to the package.
Next, cut off the bottom stems of the cilantro, then roughly chop.
Once rice is done, use a fork to fluff, then transfer it to large serving bowl. Next, stir the olive oil, juice from half a lime, and about 1/2 tsp of lime zest into the rice.
Mix in the chopped cilantro, along with salt and pepper to taste. Finally, top with your favourite vegan tzatziki
