Blackberry Grilled Cheese with Fresh Basil

Prepare the Berries

Start by first adding the blackberries to a small bowl, then use a fork to mash them. Set aside for now.

Assemble the Blackberry Grilled Cheese
Next, butter one side of each piece of bread. Then, place 2 slices of the bread, butter side down, in a pan over low-medium heat.
Sourdough is a must-have when making grilled cheeses. It is very dense and crusty, which help hold all that gooey blackberry topping inside.
Then, to assemble the sandwich, top each piece of bread with a slice of vegan cheese, half of the blackberry mixture, half of the basil, and drizzle with 1-tbsp of maple syrup.

Place the other piece of bread on top, butter side up. Then, on medium heat, grill each side for 5 minutes or until each side is golden brown.
